SMOKED TROUT EGGS FLORENTINE


Ingredients:

300g Smoked trout

3 muffins

6 eggs

1 bag cooked fresh spinach

Salt & pepper to taste

Hollandaise sauce


Method:

Toast the muffins and then slice in half

Poach the eggs until soft but firm

Season the spinach lightly and place on top of each of the muffins

Add some smoked trout on top of each serving of spinach

Add a softly poached egg on top of the trout

Season to taste

Top with a dollop of hollandaise sauce
