WINTER VEG

There are articles everywhere telling us to eat ‘x’ fruit & veg a day, eat your greens etc etc, well…. turns out that’s all true! Eating fruit & vegetables is good for us, and importantly they are affordable and easy to cook with, which we love!

If you are stuck with what to cook, and trying to eat more seasonal healthy food this January, these are the vegetables that are in season:

Vegetables in Season in January:

Beetroot, Brussels Sprouts, Carrots, Celeriac, Celery, Chicory, Jerusalem Artichokes, Kale, Leeks, Mushrooms, Onions, Parsnips, Pears, Red Cabbage, Salsify, Savoy Cabbage, Spring Greens, Spring Onions, Squash, Swedes, Turnips, White Cabbage.

If you asked us to choose a favourite, Onions would win!

Onions are a staple for us, we cook with them almost daily. They are so versatile and can be used raw, in salads, or slow cooked in stews / roasts, stir fries and great for adding to the flavour of a gravy.

In the green corner – Broccoli, Brussel Sprouts, Kale, Spinach and all the Cabbages are such fantastic sides to almost any meal. Add olive oil, garlic, rosemary, chilli or even bacon to give them a little something extra. Look for deep green leaves with no discolouration. Use them in hearty winter soups, steam them or throw in a pot with some olive oil, splash of water and a pinch of salt and let them gently steam for about 10 minutes, stirring every couple of minutes to evenly cook. So useful, so tasty and wow do they pack a punch on the nutritional side too.

When it comes to squash, well we love them all!

Roasting squash is our go-to method of preparing them as it is very easy, just peel, coat in oil, season and roast them! Parsnips are great roasted but are totally fabulous in a curried parsnip soup, very heart warming at this time of year, they are high in vitamin C and potassium, great for the heart!

Jerusalem Artichokes are delicious roasted, having a sweet, nutty, melting flesh a little like a mild parsnip and also very delicious as a soup.

We would be here all day if we spoke about all the winter veg – don’t even get us started on Carrots and oh my…. what about the humble (or not so humble!) Mushroom? Roasting… stir frying… pickling!

So if eating more vegetables and eating more seasonally is your New Year resolution, we hope this article has inspired you. The the fertile soil of the UK gives us a huge variety of choice so we don’t need to look too far to get nutritious and affordable veg that can be prepared in so many ways…
